Among the few Michelin-starred restaurants around Faro, Vista, in the harbour town of Portimão, is one of the most eagerly-monitored by gourmets. It has to be said that its chef, João Oliveira, is a safe bet when it comes to Portuguese cuisine: voted “Chef of the Future” in 2019 by the National Academy of Gastronomy (an award recognising young, talented chefs), he was awarded his first star for the Vista when he was barely 30.
Specialising in dishes celebrating fish in all its forms, João Oliveira is a wizard at combining the produce of the Algarve, 95% of the ingredients used by the restaurant team actually being grown close by. His modern, creative cuisine, which the chef rightly calls “sustainable Portugal”, is inspired by national and Mediterranean recipes.
You can thus try, for example, Algarve prawns with organic tomatoes and camomile, oysters with mandarins and fennel, or veal from Alentejo - a large Portuguese region neighbouring the Algarve - with garlic and wild pepper. Vegetarians can opt for the meat-free menu, with, for example, a cauliflower-based recipe with seaweed caviar and hazelnuts, or another that deliciously combines celery, lychees and ginger. When booking, ask for a table on the terrace: you will enjoy a unique ocean view while enjoying the chef's sophisticated dishes.
